As a boutique winery we specialize in production of our estate grown white and red varietals. This includes our Pinot Gris, chardonnay, Cabernet Sauvignon, Merlot and hybrid grape Chambourcin. There is 5 acres total with 1 acre dedicated to each Varietal.
Our processing of the wines begins with hand picking at harvest. Prior to picking we insure the brix ( sugar content) and acids are ideal. We offer our customers and wine club members this opportunity to participate in harvest with lunch and snacks provided. After harvest the grapes are crushed and pressed and fermentation begins. We use the highest grade yeasts and nutrients For the best flavors and outcomes. After fermentation our reds are placed in oak barrels for proper aging up to 18 months. Our Pinot and Chardonnay are aged separately in stainless and oak individually. Year to year we change our yeasts for different enhanced flavors. When properly finished after aging each wine finished product is hand bottled by our staff. Pay attention to our cork with the special inscription ‘God has blessed Us’. We do believe in that.
Over the years since our first wines were released we have brought in other varietals and fruit wines to meet our customer needs and tastes. We our extending our outsourcing to the best local growers and west coast affiliates. This assures us the best grown fruit beyond our 5 acre estate to fill our market basket. Besides our estate grown wines we have added Sauvignon blanc and Villard as 2 more premium whites. This year our Dyer’s Creek Blanc won the Governors cup for best in class. It is a Vidal blanc with Apricot. Slightly sweet with a crisp finish and one of of our best sellers.
We offer some fine red blends as Stratus and our Coastal Red. Along with the reds we offer a smooth Bayberry Blush with several fine rose’s . Our apple fruit wines are tantalizing with both filtered and unfiltered . If you love sweet you will enjoy our concord wine. We feature 3 wines as a conservation series with donation to the Wetland’s Institute in Stone Harbor for each sale. These include our Redknot Rose’, Monarch Chardonnay and Horshoe Crab Port.
New this year is our fortified dessert wine Vidal Blanc and Ruby Red Chambourcin. Both are excellent as after dinner selections for port afficiandos. Later this summer we are excited to be offering our first Syrah, Dry and fruit forward with brilliant color.
